- 20 oz. white and golden corn (about 4 cups)

- 1 Tbsp. lemon juice
- 1 tsp. sea salt
Instructions
- Preheat the broiler to high heat (500°F) and position the rack about 6 inches below.
- Place poblano peppers on a foil-lined baking sheet and broil for about 10 minutes, flipping halfway through until charred.
- Transfer charred peppers to a bowl, cover, and steam for approximately 10 minutes until cool enough to handle. Dice after removing stems, seeds, and skins.
- While steaming, prepare additional ingredients: cook corn as directed or roast; dice onion; mince jalapeno if using; chop cilantro.
