  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10 oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese (softened)
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut rum for at least one hour. Drain and pat dry.
  2. Set up three shallow bowls: one with flour, one with sweetened coconut flakes, and one whisked egg mixture combined with coconut milk.
  3. Dip each pineapple ring into flour, then egg mixture, and finally coat in coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the pineapple rings for about one minute per side until golden brown. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and stir in reserved rum until desired consistency is reached.
