  • 4 large russet potatoes
  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • Optional: shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and dry potatoes, prick with a fork, rub with olive oil, and sprinkle salt. Bake for 45–50 minutes until fork-tender.
  2. In a skillet over medium heat, cook ground beef or lamb until browned. Drain excess fat.
  3. Add onion, carrots, and garlic; sauté for about 5 minutes until softened.
  4. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour in beef broth and simmer for about 10 minutes.
  5. Slice off the tops of each baked potato and scoop out most of the insides into a bowl. Mash with milk, butter, garlic powder, salt, and pepper.
  6. Fill each potato with the meat mixture and top with mashed potatoes. Sprinkle cheese if desired.
  7. Return to the oven for another 10–15 minutes until tops are golden.
