  • 2 tbsp double concentrated tomato paste
  • 2 tbsp flour
  • 1.7 pounds waxy potatoes, cut into bite-sized pieces
  • 6 cups chicken broth
  • ¾ cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing chorizo.
  2. Heat olive oil in a large pot over medium-high heat. Add chorizo and cook until browned (about 3 minutes).
  3. Stir in bell pepper, onion, garlic, and carrot; cook for an additional 6 minutes.
  4. Add tomato paste and flour; stir until fully combined.
  5. Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat to simmer for about 15 minutes or until potatoes are tender.
