Ingredients
- 3 tbsp toasted sesame oil
- 4 cups chicken (or vegetable) broth
- 1 can (14 oz) unsweetened coconut milk
- 2 tbsp Thai red curry paste
- 9 ounces instant ramen noodles
- 3.5 ounces shiitakes
- 4 garlic cloves
- 1 tbsp fresh ginger
- Toppings: chili oil, sesame seeds, chopped chives, boiled eggs
Instructions
- Prepare all ingredients by grating garlic and ginger and tearing shiitakes.
- Heat 1 tbsp sesame oil in a large pot over medium heat; sauté shiitakes until browned and crispy.
- Lower the heat; add another tbsp of oil with garlic and ginger. Cook until fragrant.
- Deglaze the pot with chicken broth; bring to a boil.
- Stir in turmeric, brown sugar, soy sauce, fish sauce, red curry paste, coconut milk, and lime juice; add ramen noodles.
- Cook for about 2 minutes or separately if not serving immediately.
- Serve hot topped with sautéed shiitakes, sesame seeds, chives, chili oil, and halved boiled eggs.
