Ingredients

  • 3 tbsp toasted sesame oil
  • 4 cups chicken (or vegetable) broth
  • 1 can (14 oz) unsweetened coconut milk
  • 2 tbsp Thai red curry paste
  • 9 ounces instant ramen noodles
  • 3.5 ounces shiitakes
  • 4 garlic cloves
  • 1 tbsp fresh ginger
  • Toppings: chili oil, sesame seeds, chopped chives, boiled eggs

Instructions

  1. Prepare all ingredients by grating garlic and ginger and tearing shiitakes.
  2. Heat 1 tbsp sesame oil in a large pot over medium heat; sauté shiitakes until browned and crispy.
  3. Lower the heat; add another tbsp of oil with garlic and ginger. Cook until fragrant.
  4. Deglaze the pot with chicken broth; bring to a boil.
  5. Stir in turmeric, brown sugar, soy sauce, fish sauce, red curry paste, coconut milk, and lime juice; add ramen noodles.
  6. Cook for about 2 minutes or separately if not serving immediately.
  7. Serve hot topped with sautéed shiitakes, sesame seeds, chives, chili oil, and halved boiled eggs.
