  • 2 chicken breasts
  • 1 lime (juiced and zested)
  • ½ cup ranch dressing
  • 2 avocados (sliced)
  • 1 head green leaf lettuce (chopped)
  • 2 tomatoes (diced)
  • 1 can black beans (drained and rinsed)
  • 1 red bell pepper (sliced)
  • 1 cup corn
  • Tortilla strips for topping
  • Hot sauce of choice

Instructions

  1. Marinate chicken in lime juice, zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil for at least 8 hours.
  2. Grill marinated chicken over medium heat for about 10–12 minutes until cooked through. Allow to cool and slice.
  3. Mix ranch dressing with hot sauce in a bowl.
  4. In a large bowl or on plates, layer chopped lettuce and top with sliced chicken, diced tomatoes, black beans, bell pepper, avocado slices, corn, tortilla strips, and cilantro.
  5. Drizzle with spicy ranch dressing just before serving.
