  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt

  • ½ cup butter (for caramel sauce)
  • 1 ½ cups brown sugar (for caramel sauce)
  • 1 cup cream (35%) (for caramel sauce)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, mix chopped dates with baking soda. Scald the milk in a saucepan and pour it over the dates. Let it cool for about 15 minutes.
  3. In one bowl, combine flour, baking powder, and salt; in another bowl, beat together eggs. Blend eggs, brown sugar, butter, and vanilla in a food processor until combined.
  4. Gradually add dry ingredients through the feed tube while mixing on low speed. Add soaked dates and their liquid; blend until smooth.
  5. Pour batter into the prepared dish and bake for about 30 minutes until golden edges form.
  6. For the caramel sauce, melt butter in a saucepan over moderate heat; stir in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  7. Once baked, poke holes in the pudding surface and pour one-third of the caramel sauce over it to soak.
  8. Serve warm with additional caramel sauce drizzled on top and a dollop of whipped cream.
