Instructions
- Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
- In a bowl, mix chopped dates with baking soda. Scald the milk in a saucepan and pour it over the dates. Let it cool for about 15 minutes.
- In one bowl, combine flour, baking powder, and salt; in another bowl, beat together eggs. Blend eggs, brown sugar, butter, and vanilla in a food processor until combined.
- Gradually add dry ingredients through the feed tube while mixing on low speed. Add soaked dates and their liquid; blend until smooth.
- Pour batter into the prepared dish and bake for about 30 minutes until golden edges form.
- For the caramel sauce, melt butter in a saucepan over moderate heat; stir in brown sugar and salt until dissolved. Add cream and simmer until thickened.
