  • 1/2 tsp vanilla extract
  • 5 drops red food coloring (optional)
  • 3/4 cup diced strawberries (about 1/4-inch pieces)
  • Diced and whole strawberries for topping (about 1 lb small strawberries)
  • 1/2 cup + 2 Tbsp strawberry puree (for frosting)
  • 1/2 cup unsalted butter (nearly at room temperature)
  • 1/4 cup salted butter (nearly at room temperature)
  • 2 1/22 3/4 cups powdered sugar
  • 1/4 tsp vanilla extract (for frosting)
  • 4 drops red food coloring (optional, for frosting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift together cake flour, baking powder, baking soda, and salt; set aside.
  3. Cream softened butter and sugar until fluffy. Add eggs one at a time.
  4. Combine buttermilk, strawberry puree, and vanilla; mix into the batter alternately with dry ingredients.
  5. Fold in diced strawberries and pour into lined muffin cups.
  6. Bake for 20-23 minutes or until a toothpick comes out clean; cool before frosting.
  7. For the frosting, reduce strawberry puree and mix with butters until fluffy; add powdered sugar to reach desired consistency.
  8. Frost cooled cupcakes and decorate with fresh strawberries.
