Ingredients
- 3 ripe peaches
- 7 to 10 fresh basil leaves
- ½ cup roasted pistachios, roughly chopped
- 4 cups arugula
- 1 Tbsp. grapeseed oil (or another neutral oil)
- 1 Tbsp. lemon juice
- ½ tsp. agave
- Pinch of salt
- 1 Tbsp. hemp seeds
Instructions
- Cut peaches into 1-inch wedges and place in a serving bowl.
- Stack and roll basil leaves; slice into ribbons and add to the bowl.
- Toast pistachios in a small skillet over medium-low heat for about three minutes until fragrant. Add to the peach mixture.
- In a separate bowl, whisk together grapeseed oil, lemon juice, agave, and salt. Pour over the peach salad and mix gently; sprinkle hemp seeds on top.
- Serve over arugula in individual bowls.
