- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 2 tablespoons rice vinegar
- 2 tablespoons fresh lime juice
- 1 tablespoon sriracha
- â…“ cup mayonnaise
- 1 teaspoon toasted sesame oil
- 2 tablespoons water
- Pickled red onions
- 1 cup shelled edamame (steamed)
- 1 cup diced fresh pineapple
- 1 Persian cucumber (thinly sliced)
- 1 carrot (peeled into ribbons or thinly sliced)

Instructions
- Rinse 2 cups of short-grain sushi rice under cold water until clear; then cook in a rice cooker with 2 cups water.
- In a saucepan, combine ½ cup soy sauce, ¼ cup water, ¼ cup light brown sugar, 1 tablespoon rice vinegar, grated garlic (1 teaspoon), grated ginger (1 teaspoon), and cornstarch (2 teaspoons). Simmer until thickened.
- Coat 1 pound of boneless chicken breasts with olive oil and half the teriyaki sauce; bake at 375°F for 25-30 minutes until cooked through.
- Assemble each bowl with sushi rice as the base, top with sliced chicken and your choice of diced pineapple, edamame, cucumbers, carrots, and drizzle remaining teriyaki sauce.
