  • 20 gyozas (or potstickers)
  • 4 garlic cloves
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 14 oz unsweetened coconut milk
  • 1 tbsp low sodium soy sauce
  • 3 tbsp Thai red curry paste
  • 2 tbsp lime juice
  • 1 tbsp vegetable oil
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 1 tsp brown sugar
  • Chopped chives (for serving)
  • Your favorite vegetables (optional, for serving)

Instructions

  1. Prepare your ingredients by boiling salted water in a large saucepan and grating garlic and ginger.
  2. In a large pot, heat vegetable oil over medium heat. Sauté grated garlic and ginger until fragrant.
  3. Add chicken broth, coconut milk, soy sauce, fish sauce, sesame oil, brown sugar, Thai red curry paste, and lime juice. Stir well and bring to a boil; then simmer for 5 minutes.
  4. Cook gyozas in boiling water according to package instructions (about 2-3 minutes). Drain carefully.
  5. Serve by dividing gyozas into bowls and ladling hot soup over them. Garnish with chopped chives or your favorite toppings.
