Ingredients

  • 8 ounces of pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced into rounds)
  • 2 cups of cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons of olive oil
  • ¼ cup of fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Before draining, reserve ½ cup of the cooking water.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the zucchini for about 3-4 minutes on each side until golden brown and tender; remove from the skillet.
  3. Add the remaining tablespoon of olive oil to the skillet, sauté garlic for 30 seconds until fragrant, then add cherry tomatoes along with a pinch of salt. Cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet, add cooked pasta and toss everything together. If needed, use reserved pasta water for a smoother consistency.
  5. Stir in chopped basil and season with salt, pepper, and red pepper flakes if desired.
  6. Serve warm and enjoy!
