Ingredients
- 1 large onion
- 3 large carrots
- 2 ribs celery
- 5 cloves garlic
- 1 medium rutabaga/swede
- 4 large potatoes
- ¼ head green cabbage
- 9 oz vegan beef or portobello mushrooms (optional)
- 4 cups vegetable stock
- ¼ cup soy sauce
- Fresh herbs (bay leaves, thyme, rosemary)
- 2 tablespoons oil (or use water for oil-free)
- 4 tablespoons all-purpose flour (or cornstarch)
- 2 teaspoons sea salt
- 1 teaspoon freshly ground black pepper
- 1 tbsp white or cane sugar
Instructions
- In a large Dutch oven or soup pot over high heat, add oil.
- Sear the vegan beef or mushrooms until golden brown; remove and set aside.
- Lower heat to medium and sauté onions, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Stir in flour until coated; cook for 1-2 minutes.
- Gradually pour in vegetable stock while stirring until smooth.
- Mix in rutabaga/swede, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary; stir well.
- Bring to a boil; reduce heat to medium-low and simmer uncovered for about 45-50 minutes until potatoes are tender.
- Stir in seared protein/mushrooms about ten minutes before serving.
- Remove herb stalks before serving.
