  • 1 large onion
  • 3 large carrots
  • 2 ribs celery
  • 5 cloves garlic
  • 1 medium rutabaga/swede
  • 4 large potatoes
  • ¼ head green cabbage
  • 9 oz vegan beef or portobello mushrooms (optional)
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • Fresh herbs (bay leaves, thyme, rosemary)
  • 2 tablespoons oil (or use water for oil-free)
  • 4 tablespoons all-purpose flour (or cornstarch)
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tbsp white or cane sugar

Instructions

  1. In a large Dutch oven or soup pot over high heat, add oil.
  2. Sear the vegan beef or mushrooms until golden brown; remove and set aside.
  3. Lower heat to medium and sauté onions, carrots, and celery until softened.
  4. Add garlic and cook for another minute.
  5. Stir in flour until coated; cook for 1-2 minutes.
  6. Gradually pour in vegetable stock while stirring until smooth.
  7. Mix in rutabaga/swede, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary; stir well.
  8. Bring to a boil; reduce heat to medium-low and simmer uncovered for about 45-50 minutes until potatoes are tender.
  9. Stir in seared protein/mushrooms about ten minutes before serving.
  10. Remove herb stalks before serving.
