  • Olive oil for drizzling
  • 1 cup fresh vegan ricotta
  • 1 lb fresh spinach, chopped and cooked
  • Basil leaves, chopped (to taste)
  • 1 tbsp Italian seasoning
  • 1 cup marinara sauce
  • Vegan mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice zucchinis lengthwise into thin strips and drizzle with olive oil.
  3. In a mixing bowl, combine vegan ricotta, cooked spinach, basil, Italian seasoning, and salt until well mixed.
  4. Lay out zucchini slices, place filling at one end, and roll up tightly.
  5. Spread half of marinara sauce in a baking dish and arrange rolled zucchinis seam-side down.
  6. Pour remaining marinara on top and sprinkle with vegan mozzarella.
  7. Bake for about 40 minutes or until golden brown and bubbly.
