- 2 large eggs

- ¾ cup all-purpose flour

- ½ tsp ground black pepper

Instructions
- Wash zucchini, trim ends, and grate using a box grater or food processor. Place in a large bowl with 1 teaspoon of salt and let sit for 10 minutes.
- Squeeze grated zucchini over the sink to remove excess moisture and return to the bowl.
- Add green onions and beaten eggs to the zucchini. In a separate bowl, combine flour, baking powder, remaining salt, and black pepper; mix well.
