Ingredients

  • 2 pounds zucchini
  • 1 large egg
  • 1 large red onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Grate the zucchini and toss it with salt in a colander. Let it sit for 10 minutes to drain excess moisture.
  2. Squeeze out as much water as possible from the zucchini using your hands or a clean towel.
  3. In a mixing bowl, beat the egg and add the drained zucchini, sliced onion, grated garlic, oregano, flour, baking powder, salt, and black pepper. Mix well until combined.
  4. Heat olive oil in a frying pan over medium-high heat. Drop spoonfuls of the batter into the pan and flatten gently with a spatula.
  5. Cook for about 3–4 minutes on each side until golden brown and crispy. Transfer to paper towels to absorb excess oil.
