Ingredients

Instructions
- In a stock pot over medium heat, combine grated zucchini, sugar, and lemon juice. Bring to a simmer and reduce heat to medium-low. Cook for 8-10 minutes or until the mixture reduces slightly.
- Stir in the Jell-O powder until fully incorporated. Remove from heat and allow to cool slightly; note that the mixture will thicken as it cools.
- Transfer into jars, leaving a one-inch gap at the top for expansion when freezing. Let cool completely at room temperature with lids off.
