Ingredients

  • 4 cups finely shredded zucchini (do not drain liquid)
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 3 ounce box Jell-O (any flavor)

Instructions

  1. In a stock pot over medium heat, combine grated zucchini, sugar, and lemon juice. Bring to a simmer and reduce heat to medium-low. Cook for 8-10 minutes or until the mixture reduces slightly.
  2. Stir in the Jell-O powder until fully incorporated. Remove from heat and allow to cool slightly; note that the mixture will thicken as it cools.
  3. Transfer into jars, leaving a one-inch gap at the top for expansion when freezing. Let cool completely at room temperature with lids off.
  4. Once cooled, secure lids on jars and store in the refrigerator or freezer.
